There is something so divine about the French Riviera, the stretch of coastline from Toulon in the west to the Italian border in the east, here in the little seaside town of Antibes you might just find yourself in a little restaurant with an orange canopy near the marina on a spring morning with a warm chocolate croissant and sipping a cup of the finest Ceylon Earl Grey scented bergamot oil and lavender blossom. We never did discover the name of the tea but after some trial and error we think this onis one is just as nice and when you make yourself a cup on a Sunday morning we really do recommend having a chocolate croissant or two to go with it.
1 tsp per cup in water at 95°c for 3-4 mins
With milk or honey and lemon as desired.
