French Earl Grey Cookie Ingredients

We all know that tea is fabulous to drink but what about to eat?

Tea is more versatile than you first thought and from time to time we’ll put a few of our favourite recipes up for you all to enjoy.

This recipe is very easy to make and very popular around the Red Leaf Tea offices so much so that there is never any left to take home at the end of the day. You might have seen other Earl Grey biscuit recipes but I like to think that this one has the others beaten.

Ingredients:French Earl Grey Batter

  • 100g olive oil spread
  • 1 large egg
  • ½ vanilla bean of ½ tspn vanilla essence
  • 1½ cups plain flour
  • ½ cup caster sugar
  • ½ tspn baking powder
  • Pinch of salt
  • 1 tblspn French Earl Grey tealeaves
  • ½ tblspn orange zest

1. In a large bowl cream together the butter and caster sugar until fluffy

2. Beat in the egg and vanilla until well combined

3. Using a stick mixer or mini food processor grind the tea leaves to a fine powder

4. Sift in the flour, baking powder and salt, add the tealeaves and orange zest and mix well

5. Wrap the mixture in plastic wrap and refrigerate for an hour

6. Line a baking tray with baking powder and heat a moderate oven

7. Roll the dough out on a lightly floured surface to about a half centimeter thickness and stamp out as many rounds as you can with a small biscuit cutter.

8. Bake for 12minutes or until just golden on top and cool for five minutes before transferring to a tin.

For the sweet tooths out there try adding a touch of lemon and white chocolate icing.
